Greek Salad
Crisp, fresh and reminiscent of the best Mediterranean holidays this is my family supper version of Greek salad which is quick, easy and virtuous...
Serves 4
Ingredients:
1 head Romaine lettuce
1/2 a cucumber
8 ripe medium vine tomatoes
1 green pepper
1 yellow pepper
Black or Kalamata olives
1 pack of Feta cheese
1 small red onion
For the dressing:
100 ml white wine vinegar
1 teaspoon Dijon mustard
200 ml good quality olive oil
White or wholemeal pitta breads to serve
Method: Wash and chop the lettuce and put in a large, flattish, salad bowl. Chop the peppers, cucumber and tomatoes into similar sized chunks (about 1 inch cube) and mix in with the lettuce. Chop the feta into similar sized cubes and sprinkle over the top with the olives and onions. To make the dressing put the vinegar, mustard and olive oil into an empty jam jar and shake very well to a smooth consistency. Drizzle over the salad then toss well. Warm the pittas through in a low temperature oven or grill and serve with the salad.
