Chocolate Porter Torte
How about this for a grand finale on New Year’s eve.
From The Chiltern Brewery, this exquisite marriage of fine English ale and dark chocolate makes a really moist and delicious cake or dessert option. The beer adds a malty flavour and a rich note and should be enjoyed with a nice glass of Chiltern Ale.
Ingredients:
100g unsalted butter
140g 70% dark chocolate (preferably Rumsey’s) broken into pieces
6 large eggs , separated
140g ground almonds
3 tablespoons Chiltern Brewery Lord-Lieutenant’s Porter Beer
85g caster sugar
Pinch of salt
Cocoa powder for dusting
Crème fraiche and Chiltern Brewery Lord-Lieutenant’s Porter Beer to serve
Method:
Preheat the oven to 170°C/Gas 3/fan oven 150°C. Grease a 23cm spring form cake tin and line the base with greaseproof paper then dust the sides with a little flour. Melt the chocolate and butter in a heatproof bowl over a pan of simmering water then leave to cool for a few minutes.
Mix the egg yolks, ground almonds and Lord-Lieutenant’s Porter into the chocolate mixture and stir well. It will appear a little grainy which is fine. Whisk the egg whites, add a pinch of salt and then whisk into stiff peaks. Stir the sugar into the egg whites, a little at a time, then fold the egg white mixture into the chocolate just 2 or 3 tablespoons at a time.
Bake for 30-35 minutes until well risen then leave to cool in the tin before serving.To serve, sift cocoa powder over the top and add a spoonful of crème fraiche which has Lord-Lieutenant’s Porter stirred through it. Enjoy…
